Golani DoubleWood is a distinctive Israeli whisky produced by the Golan Heights Distillery, founded in 2014 by David Zibell. This expression is crafted from a mash bill of malted barley and wheat, distilled in traditional copper pot stills. It undergoes maturation for 36 months at an elevation of 1,300 feet above sea level, utilizing a combination of new charred American oak and Cabernet oak casks sourced from local wineries, imparting a unique character to the spirit.
On the nose, Golani DoubleWood presents a harmonious blend of liquorice, wine sweetness, and subtle menthol notes. The palate reveals flavors of grain, glue, wine sweetness, mint, and pine freshness, complemented by hints of liquorice and pencil shavings. The finish is of medium length, featuring lingering notes of wine, butterscotch, and gentle oak spices.
