400 Conejos Joven Mezcal is a premium unaged spirit crafted from 100% Espadín agave, meticulously selected after maturing for 8 to 10 years. Produced by maestro mezcalero Don Tacho in Santiago Matatlán, Oaxaca, this mezcal is traditionally made using a stone oven (horno), horse-drawn tahona, and copper distillation, reflecting time-honored artisanal methods.
The name "400 Conejos" (meaning "400 Rabbits") is rooted in ancient Mesoamerican mythology, where the number 400 symbolized "innumerable" and was associated with the gods of intoxication, collectively called centzon-totchtin. It was believed that these spirits inhabited agave beverages, influencing those who consumed them.
On the nose, 400 Conejos Joven presents herbal and smoky aromas with hints of fennel seed, sourdough, and roasted corn. The palate is smooth and vibrant, offering flavors of grilled corn, drawn butter, smoked herbs, and grilled sweet asparagus. The finish is nuanced and long, with a light smokiness and depth of agave.
